My May started Cinco de Mayo

But I have been recovering from a bad cold for most of the week.

Uggh, I was planning on cooking in May, but this was my week instead.

  • Sunday – husband cooked pancakes for dinner.  I did go to church and do music in primary, but at home I just read and felt icky.
  • Monday – the boys made their own dinner.  I grabbed Chick-Fil-E on the way to teaching class.  I wasn’t contagious anymore, but didn’t feel great.
  • Tuesday – Still tired, spent the day running errands, volunteering at school – picked up Baja Fresh on the way home from getting T2 from drama club.  Then headed back to school for a class meeting.
  • Wednesday – This is my busy crazy day.  Car Pool, Kids are Music Practice, quick run home, picked up pizza, got T1, home for 30 minutes, eating pizza, getting piano stuff together, then back out to T2 piano lessons.
  • I did all these things at very low levels of functioning and just couldn’t quite get dinners organized.  I need to be on top of it for Tues and Wednesday nights, doing slow cooker or something, because our eating window time is so small.
  • Thursday – Made Parmesan chicken.  YAY, actually cooked something.

So Cinco de Mayo was my first day of Cooking in May!

Next week I will have time and energy to actually organize something in addition to cooking great meals.
